Congratulations!  You've stumbled upon the often overlooked cross-cut beef shank.  This is perhaps the most underrated cut of beef, but there are lots of reasons you should consider trying it today:

  • Lean.  Makes for a great high-protein-low-fat meal
  • Rich. Beef. Flavor.
  • Marrow included!  That cross-cut leg bone is filled with succulent marrow
  • Low cost per pound (less than $3/lb Steakhouse and $4/lb Organic)
  • Easy.  Just braise (slow cook) it, or, get a little more creative

With all that going for it, the value proposition of a good beef shank is forever in your flavor.  Try it in a stew, a soup, osso buco, a simple moist-heat braise, or what may be Ron Burgundy's favorite style, Beef Bergundy (Bourguignon).  Did we mention osso buco?

Our Beef Shanks come two per package and, like all beef shanks, are cut from the Shank Primal, which is a portion of the leg and is used extensively for moooovement (like playing fetch).

 

What is the difference between Organic Grass Fed & Finished and Steakhouse Beef? 

USDA Organic Grass Fed & Finished Beef 

Certified USDA Organic cattle are raised on 100% Organic Grass from ween while grazing in open pastures, never in a feed lot. Very lean beef with little to no fat content.  Always Antibiotic and Hormone free. 

 

Prosper Steakhouse Beef

Cattle are fed an optimized mixture of Grass, Organic Grass, Corn and Distillers Corn Grain. Raised and marketed for high end steakhouses, you can enjoy the same top notch quality at home from Prosper Meats with our Prosper Steakhouse cuts. Always Hormone free.
