Ribeye Steak, "Cowboy Steak"

Our Cowboy Steaks (similar to a Tomahawk Steak but with a shorter frenched bone) are 2 inches thick and packaged individually. This very large steak is incredibly flavorful and one of a kind!

The Cowboy Steak is a rich, juicy cut full of flavor and generous marbling. It comes complete with a frenched bone and is perfect for sautéing or grilling.

The Cowboy Steak comes from the Rib Primal region just under the front section of the backbone. This area is primarily used for support, making the cuts extremely tender.

Two Options Available:

  • Organic Grass Fed & Finished Beef: Certified USDA Organic cattle are raised on 100% organic grass from weaning while grazing in open pastures, never in a feedlot. This results in very lean beef with little to no fat content. Always antibiotic and hormone-free.

Cowboy Steak & Roast Rub

Ingredients

  • 2 teaspoons sweet paprika
  • 1-1/2 teaspoons dried thyme leaves
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt (optional)
  • 1/2 teaspoon pepper

Directions

  1. Combine all ingredients in a small bowl; press evenly onto beef steaks or roast.
  2. Grill, pan-broil, or broil steaks; place roast in oven and cook according to chart. Cook to medium rare (145°F) to medium (160°F) doneness.

I'm a first-timer and it was amazing

Big fat juicy steak that was easier to cook than I expected. Don't be intimidated by this triumphant cut of meat.

I covered in generous amount of seasonings (it's a fat steak), seared in butter for ~3 minutes on each side in my largest cast iron skillet on high heat grabbing the bone to flip, placed skillet directly in 350 degree oven for ~10-15 minutes until internal temp was ~130 degrees, then let rest for 10 minutes before cutting into. Easy peasy. I even made some bone broth the next day.

The only problem was that I lost sleep that night while imagining how I was going to enjoy all of the excessive leftovers the next day. It was too big for 2 of us to gut in one sitting. Plus, the steak was so beautiful that I could hardly see my semi through all my tears of joy.

I ordered the largest Tomahawk Prosper had, and it clicked in at 3.8#!

Todays my birthday, and this beast is the centerpiece.

It’s warming up to room temp just now, wrapped in a blanket of 5280’s Prime Rib Rub-a-dub. I’m going to cold reverse sear this bad boy, slow and low. Grilled shrooms, fresh corn, and offering both a Shiraz and a Zin.
