Coulotte (Coulette) Steak, also known as Picanha or Top Sirloin Cap Steak, is a premium boneless cut with beautiful marbling. Coulotte is relatively lean, but because it is so well marbled it is still quite tender with a savory, mouth-watering flavor.
Coulotte steak is a cut from the triangle-shaped muscle that caps the top sirloin part of a beef cattle. It is well known to be one of the best cuts for grilling, but it is also quite versatile, working exceptionally well in sautéed dishes, skillets, and stir-fries.
