Chuck Roast Au Jus

Ingredients:

  • 1 tablespoon ground black pepper
  • 1 tablespoon paprika
  • 2 teaspoons chili powder
  • 1/2 teaspoon celery salt
  • 1/2 teaspoon ground cayenne pepper
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon mustard powder
  • 1 (4 pound) rump roast
  • 1/2 cup water

Directions:

  1. In a small bowl, mix together black pepper, paprika, chili powder, celery salt, cayenne pepper, garlic powder, and mustard powder. Rub mixture over the surface of the meat. Place roast in a slow cooker, and add 1/2 cup water.
  2. Cover, and cook on Low for 8 to 10 hours. When meat is tender and well done, transfer roast to a serving platter. Skim fat from juices, and strain; serve with meat.

It reminded me of my childhood

I heard about Prosper Meat through ads on TV. I got this wonderful 2-1/2# Chuck roast and shared it with friends on Superbowl Sunday. It was the best roast I've had since my Mom's in rural Missouri when I was a kid. So much flavor!

Chuck Roast

The meat itself is fantastic. The issue i have with this order is I had to reseal all except 1 of the 8 roasts.
The package also road around in a FedEx truck for 3 days before being delivered. The meat was still frozen but had to be repackaged

My go to for stew.

For years I wondered why it was so hard to get the beef in stews to come out as tender as when I first started cooking for myself 50 years ago. If you didn't simmer it long enough it was too tough and if you simmered it longer it was too dry. I now realize we just had superior beef in the Chicago area back then, all of it "natural" by today's standards. The first time a I made my old beef stew recipe with this chuck it came out just as tender and delicious as I remember from the old days. I won't even try to make stew or pot roast with anything else!
